Deus Brut des Flandres

A Belgian strong ale, brewed by the Brouwerij Bosteels. This is an amazing beer that goes through a triple fermentation process that culminates in a Champagne-like yeast removal.
The first fermentation occurs as per normal, followed by a period of maturation, known as the second fermentation. Fermentable sugars are added at bottling and the beer undergoes a long maturation aged in the bottle, during which the third fermentation takes place. The beer is then transported to France where the yeast removal takes place. This begins with Turning or “remuage” a process to detach the yeast from the wall of the bottle and collect it in the neck. Bottles are positioned with their neck tilted downwards and over a period of weeks gradually inclined further until the neck is vertical. The yeast is then removed through a process called dégorgement that sees the neck of the bottle frozen and the ice, containing the yeast, expelled by the pressure of the carbonation – exactly like champagne.
Drink chilled (2-4°C) in a Champagne flute.

Peroni Blue Ribbon, a premium Euro lager in the mould of Heinken and Carlsberg, but not yet as well-known. A very solid, light (as in colour) lager – perfect for everyday drinking. Unlike Stella Artois and a number of other Euro lagers, this one’s fully imported. Does this make is better? Depends on your point of view – to many, imported means exotic and authentic – but beer travels badly and lagers like this are at their best as they leave the brewery gate. With a light green bottle the beer isn’t protected from UV light and this hoppy beer is prone to light strike (aka – skunking). For this reason, often best to buy a carton as the packing shields the beer from light.
At it’s best, this is a great refresher – a good beer garden and outdoor dining beer.
